GREEN BEAN AND WALNUT SALAD WITH EDAMAME AND POMEGRANATE
Edamame are green soy beans. You can find them in the freezer section of large grocery stores.250 g green beans, trimmed
2 Tbsp. roasted walnut oil
2 tsp. fresh lemon juice
salt and pepper to taste
1/3 cup frozen edamame, thawed
1/3 cup pomegranate seeds
1/4 cup halved walnuts, toasted
In a large pot of boiling water, blanch green beans until just crisp tender, about 3 minutes. Plunge beans immediately in ice water to stop cooking and set their colour. Drain and cool. In a medium bowl, whisk together walnut oil and lemon juice. Season with salt and pepper. Add cooled green beans, edamame and pomegrante. Toss to coat. Transfer salad to plates. Crumble toasted walnuts over each serving. Serves 4.
