CHOCOLATE CHIP OATMEAL COOKIES
1 cup (2 sticks) salted butter, softened
1-1/4 cups packed brown sugar
3/4 cup granulated sugar
2 large eggs, lightly beaten
2 tbsps milk
1 tbsp pure vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups quick-cooking oats
2 cups semisweet chocolate chips
PREPARATION: Using a mixer, cream the butter and sugars in a large bowl until light and fluffy. Add eggs, milk, and vanilla; mix until well combined.
In a separate bowl, combine the flour, baking powder, baking soda, and salt; stir into the butter mixture. Using a wooden spoon, stir in oats and chocolate chips.
Using a rounded teaspoon, shape the dough into flatten disks and place onto parchment paper-lined cookie sheets. Bake in a preheated 350F oven for about 8 to 10 minutes or until edges turn a light golden brown.
Cool slightly on sheets, then remove to wire racks to cool completely.
Makes about 70 cookies
