APPLE CINNAMON MUFFINS
1/2 cup salted butter, softened
3/4 cup granulated sugar
2 large eggs, slightly beaten
1 tbsp milk
1 tsp vanilla
1-3/4 cups all-purpose flour
1 tsp baking soda
1-1/2 tsps ground cinnamon
1-3/4 cups peeled, cored and finely chopped apple
Topping:
4 tbsps all-purpose flour
3 tbsps packed brown sugar
1 tbsp quick-cooking oats
2 tbsps salted butter, melted
PREPARATION: In large bowl, cream together butter and sugar. Stir in eggs, milk and vanilla.
In medium bowl, sift together flour, baking soda and cinnamon. Add dry ingredients to wet mixture and stir until just combined. (Note: if mixture seems too dry, stir in a few drops of milk). Using a wooden spoon, stir in apples.
Spoon mixture into lined muffins tins.
Combine topping ingredients and sprinkle onto muffin tops.
Bake in preheated 350F oven for 20 to 22 minutes or until a wooden pick inserted in centre comes out clean.
Makes about 12.
